dc.description.abstractThis research was developed with the purpose to optimize growth kinetics of Candida utilis var. major C.E.C.T. 1430 and to evaluate the nutritional quality of the dried biomass by refractance window. First, the concentration levels of ethanol, ammonia and phosphoric acid in the production of C. utilis var.major C.E.C.T 1430 were optimized through the response surface methodology (RSM) and central composite rotatable design (CCRD). Seventeen experiments were generated obtaining a maximum equivalent to 8.18 g/L of biomass or single cell protein to critical values or optimal mathematicians concentrations of 16.91 production g/L of ethanol, 1.85 g / L of ammonia and 1.36 g/L of phosphoric acid, and then in this optimized culture medium,the growth kinetics was determined by Gompertz mathematical model, calculating the specific growth rate μ = 0.1879141 h -1, latency time λ = 0.0284089 h time of generation G = 3.6886384 h. Then, the levels of dehydration time and-temperature were optimized with the technique refractance window in obtaining C. utilis var. major C.E.C.T 1430 by MSR-DCCR, 11 experiments were generated yielding a maximum humidity conservation of the product of 5%, at a temperature of 67 to 69°C in a time of 100 to 110 minutes. Finally, it was evaluated the bromatological nutritional quality of the biomass of C. utilis var major CECT 1430, obtained by dehydration with refractance window and drying stove. The statistical analysis of the results determined that with refractance window the total protein, ether extract and total fiber are better maintained, showing the highest retention of its protein content dry basis by refractance window (46.85%) compared to the drying stove (40.80%), being both within the parameters indicated by the FAO.
