dc.descriptionThis study presents and discusses the main sanitary legislation on the Seafood Industry in Brazil. They serve as guide from the capture to the consumer. Fish and Fishery products have characteristics that require strict control through all their productive chain. Besides being more perishable than many animal source foods, seafood is still target of irregularities during its processing. The sanitary legislation on seafood in Brazil is the basis to quality management control in the industry, serving also as support to inspections, adding higher safety to the products produced nationally, since it requires more efficient food traceability and hygiene conditions in the several production stages. Aiming to prevent and identify irregularities, the inspection of animal source foods is a theme of considerable importance to the agricultural field and to consumers? health. Its development follows technological and industrial developments, as well as in food safety. In this study, the documents were chronologically listed, and grouped for discussion in topics: general regulations, microbiological standards, and specific regulations.
dc.descriptionEste estudo apresenta e discute as principais legisla??es sanit?rias vigentes relacionadas ao pescado. Elas norteiam desde de sua captura at? a mesa do consumidor. O pescado e produtos de pescado possuem caracter?sticas que exigem controle rigoroso ao longo de toda a sua cadeia produtiva. Al?m de sua perecibilidade mais acentuada do que a de diversos alimentos de origem animal, o pescado ainda sofre com pr?ticas irregulares ao longo do seu processamento. As regulamenta??es sanit?rias brasileiras voltadas ao pescado s?o a base para a gest?o de controle de qualidade na ind?stria, e servem tamb?m como alicerce ? fiscaliza??o, conferindo maior seguran?a ao pescado produzido e comercializado no Pa?s, pois requer controles mais eficazes de rastreabilidade e higiene nas diversas etapas de produ??o.Com a inten??o de amenizar essas irregularidades, a inspe??o dos produtos de origem animal ? um tema de consider?vel import?ncia para o campo agropecu?rio e para a sa?de dos consumidores. Sua evolu??o hist?rica acompanha as evolu??es tecnol?gicas e industriais dos produtos de origem animal, e tamb?m na seguran?a alimentar. Nesse estudo, os documentos levantados foram listados cronologicamente, e agrupados para discuss?o nos t?picos: regulamentos gerais, padr?es microbiol?gicos, e regulamentos espec?ficos.
