dc.descriptionIn Paraguay, during the growing season in the winter, the optimal conditions for the development of the fungus and the production of mycotoxins are achieved; therefore, it is necessary to study the levels of DON present in grains and derived products that are sold in distribution centers in the country. In Paraguay, there is currently no legislation regarding the maximum permissible DON limits in cereals and derivatives, nor any institution to monitor the presence of this mycotoxin in foods. The aim of the present study was to evaluate the presence of DON in wheat products destined for human consumption in Gran Asunción, Paraguay.
