| dc.description | Milk is an essential food in the diet, and in some big cities’ conurbation areas, peri-urban dairy is an important agro-industrial activity. The aim of this work was to establish, employing surveys, the relationship between food security level and socioeconomic characteristics of households in San Salvador Atenco, besides raw milk buying and consumption preferences. The food insecurity level detected was relatively low (11%, 7%, y 3% with mild, moderate, and severe food insecurity levels, respectively), where the scholarly level and the sources of income have a significant relationship with the food security level since lower incomes are related to vulnerability situation. The was no statistical relationship between the kind of milk or the volume consumed and the food security level. The persons feel that raw milk is of better quality, healthier and sustainable, although not so cheap to households with lower income and food insecurity status. The potential of raw milk marketing as a factor de decrease food insecurity is promissory if the necessary support is given to formalize this productive chain toward a sustainable and affordable food production system. | en-US |
| dc.description | La leche es un alimento esencial en la dieta, y en algunas partes conurbadas de las grandes ciudades la lechería periurbana representa una actividad agroindustrial importante. Este trabajo tuvo como objetivo el establecer, mediate la aplicación de encuestas, la relación entre el nivel de seguridad alimentaria con las características socioeconómicas de las familias en San Salvador Atenco, y las preferencias de los consumidores por comprar y consumir leche bronca. El nivel de inseguridad alimentaria detectado fue relativamente bajo (11%, 7%, y 3% con inseguridad alimentaria leve, moderada y severa, respectivamente), donde el nivel de estudios y las fuentes de ingresos tuvieron relación significativa con el nivel de seguridad alimentaria, donde menores recursos implicaron estar en situación de vulnerabilidad. No hubo una relación estadística por preferencia del tipo de leche o volumen consumido. Las personas ven a la leche bronca como de mejor calidad, más sana y sustentable, aunque no tan económica para familias en situación de inseguridad alimentaria, con menores ingresos. El potencial del mercadeo de leche bronca como factor para disminuir la inseguridad alimentaria es promisorio, si se dan los apoyos necesarios para formalizar esta cadena productiva hacia un sistema de producción de alimentos sustentable y asequible. | es-ES |
