Determinación de compuestos fenólicos y actividad antioxidante del extracto de la pulpa y semilla del taxo (Passiflora tripartita)

Abstract

El taxo “Passiflora tripartita” es una fruta cultivada en la serranía ecuatoriana especialmente en Imbabura, el taxo se puede consumir crudo, en bebidas o helado convirtiéndose en una fuente potencial de ingresos para el país, sin embargo, la información que se encuentra en el subgénero tripartita es escaso a nivel nacional, provocando la falta de conocimiento de los beneficios y el desperdicio de esta fruta. Por lo cual es importante determinar la capacidad antioxidante del taxo “Passiflora tripartita” en pulpa y semilla. En el estudio de titulación se realizó la determinación de polifenoles totales por el método de Folin-Ciocalteau se obtuvo del extracto alcohólico en pulpa obteniendo un valor de 820 mg EAG/ml, y en semilla de 2.805 de mg EAG/ml. La actividad antioxidante fue evaluada por el método de DPPH en el cual obtuvo un valor del extracto alcohólico en pulpa 1.04 mg/ml y en semilla de 3.044 mg/ml. Por lo tanto, se obtuvo mayor capacidad antioxidante en la pulpa de “Passiflora tripartita”.

The taxo "Passiflora tripartita" is a fruit cultivated in the Ecuadorian highlands especially in Imbabura, the taxo can be consumed raw, in drinks or ice cream becoming a potential source of income for the country, however, the information found in the subgenus tripartita is scarce at the national level, causing lack of knowledge of the benefits and waste of this fruit. Therefore, it is important to determine the antioxidant capacity of the taxon "Passiflora tripartita" in pulp and seed. In the titration study, the determination of total polyphenols by the Folin- Ciocalteau method was obtained from the alcoholic extract in pulp obtaining a value of 820 mg EAG/ml, and in seed of 2.805 mg EAG/ml. The antioxidant activity was evaluated by the DPPH method in which a value of 1.04 mg/ml was obtained from the alcoholic extract in pulp and 3.044 mg/ml in seed. Therefore, a higher antioxidant capacity was obtained in the pulp of "Passiflora tripartita".
