| dc.description | The objective of this work was to strengthen capacities in the management of food handling, hygiene and biosafety protocols for gastronomic tourism operators in the canton of General Villamil Playas. The project was developed within the framework of the flagship project FCI-018 "Surveillance of SARS-CoV-2 in wastewater treatment plants and main water bodies of Guayaquil"; its implementation was carried out through the implementation of training sessions based on the results of the situational diagnosis of the target population. The intervention was inherent to the management of food handling, hygiene and biosafety protocols, and was developed in five phases: diagnostic phase, programming phase, dissemination phase, execution phase and evaluation phase, this last phase was carried out in two ways: evaluation of the population involved and evaluation of those responsible for the intervention. After the implementation of the systematization, 85% of the population was trained, and they have partially put into practice the knowledge acquired, so it can be said that the strategies implemented were easy to understand and apply for the beneficiaries of the systematization of the practical experience. | en-US |
| dc.description | El objetivo de este trabajo fue fortalecer las capacidades en el manejo de protocolos de manipulación, higiene y bioseguridad alimentaria de los operadores turísticos gastronómicos del cantón General Villamil Playas. El proyecto se desarrolló en el marco del proyecto emblemático FCI-018 “Vigilancia de SARS-CoV-2 en plantas de tratamiento de aguas residuales y principales cuerpos hídricos de Guayaquil”; su ejecución se llevó a cabo mediante la puesta en práctica de jornadas de capacitación abordadas a partir de los resultados del diagnóstico situacional de la población objeto de estudio. La intervención fue inherente al manejo de protocolos de manipulación, higiene y bioseguridad alimentaria, se desarrolló en cinco fases: fase de diagnóstico, fase de programación, fase de difusión, fase de ejecución y fase de evaluación, esta última fase se realizó en doble vía: evaluación a la población intervenida y evaluación a los responsables de la intervención. Tras la puesta en práctica de la sistematización se logró capacitar al 85% de la población, quienes han puesto en práctica de forma parcial los conocimientos adquiridos, por lo que se puede aseverar que las estrategias implementadas fueron de fácil compresión y aplicación para los beneficiarios de la sistematización de la experiencia práctica. | es-ES |
