dc.description.abstractThe objective of this study is the microbiological analysis of fresh fish for sale in the community of Cuenca. They are sold in the markets of the Sayausí and El Valle parishes and in El Arenal market in the canton of Cuenca. A quick survey determined that the fish most frequently sold in the selected markets are: corvina (Argyrosumus regius), albacore (Thunnus alalunga) and leaf fish (Chloroscombrus chrysurus). Microbiological analysis includes determination of total viable aerobic counts, Escherichia coli and Staphylococcus aureus The presence of fish-specific pathogens such as Salmonella spp. and Vibrio cholerae were also investigated.
