The present research resides in the need to know the characterization of the agricultural production systems and the flow of people and products in the rural parishes of Baños and San Joaquín, canton of Cuenca, Azuay province. Considering that agricultural production systems are of great importance around the world since it is the source of food for millions of people and it represents the main economic income of producers, poor management or lack of it, is detrimental because the welfare of population is at risk. The objectives of this research are to technically, economically and socially characterize the agricultural production systems, as well as to characterize the flow of people and products in order to estimate the sustainability of the parishes through their agricultural systems. The methodology was based on the execution of 165 surveys to producers, of which 43 are for the parish of Baños and 122 for San Joaquín, with the results obtained from the surveys, a statistical analysis of multiple correspondence (ACM) was carried out to identify the existing production systems, and flow charts were also generated. Once the data was analyzed, it was found that Baños presents 3 types of production systems and a better flow of people, through data correlation it was concluded that production system 3 is the most sustainable, this being a more natural, profitable system, and with better advice, while in San Joaquín 4 production systems and a better flow of products were identified, and analyzing their data it was concluded that system 2 is the most sustainable because it presents balanced percentages from the economic, ecological and social dimension.
