dc.description.abstract | The objective of this research work was to develop a gastronomic proposal based on the prickly pear as an emblematic product of Guano canton, Chimborazo province, in order to create a recipe book with different preparations, such as appetizers, entrees, soups and cocktails will determine the importance of the consumption of prickly pear and its inclusion in the daily menu, this research is bibliographical and applied, in addition, the theoretical and empirical method was used where the information was collected through the use of surveys applied to 99 people between 18 to 69 years old and interviews with 2 producers, who contributed to the collection of information. Through this study, the importance of prickly pear in the diet of people and the consumption of this fruit in its different preparations was identified: Prickly pear in the daily diet of people with 94.9%, it is as an emblematic product of canton Guano with 94.9%, consumption of prickly pear with 93.9%, nopal in gastronomic preparations 90.1%, prickly pear in gastronomic preparations 88.9%, consumption of prickly pear and nopal 88.9%, wings in prickly pear sauce with 83.8%, nopal ceviche with 70.7%, variety of prickly pear is consumed in a 63.6%, variety of prickly pear that is grown in the Guano canton 32.3%. It is concluded that this research will provide information about its use and benefit consumption in Guano canton making easy its access for residents and tourists to issues related to the management and preparation of recipes based on prickly pear, providing the necessary knowledge for handling it. | |
