dc.description.abstractThe present graduation work is focused on the design and construction of a semi-automated cheese-pressing machine for the microenterprise ¨Queso Fresco Santa Anita¨. That has developed the production of semi-soft fresh cheese and manually pressed fresh cheese in an artisanal way, in order to improve the quality of the product, specifically of the pressed cheese. For the development of the design and construction of the machine, it began with the study of several cheese presses, based on the analysis of alternative materials, accessories and construction equipment. Through the SolidWorks software, each of the parts of the machine structure was designed and simulated, obtaining an safety factor that allows the construction of the machine with the material selected in the analysis of alternatives. In order to verify the control operation of the semiautomatic cheese press, several functional tests were carried out, using the strain gauge to determine the applied forcé in each pressing, obtaining favorable results in the design and construction of the semi-automatic pressing machine for cheeses.
