The aim was to analyze the technological innovations in coffee production in the Cerrado Mineiro region, evaluating if the coffee production with Protected Designation of Origin was able to guide the improvement of quality and generate innovations. As a method were applied case studies, through a field research with farmers in the Cerrado Mineiro region, specifically in Patrocínio (MG). The results showed that the producers using the protected designation of origin have a higher level of improvement and adoption of innovations aimed at improving the quality of production in relation to the producers who do not produce source coffees.
