dc.description.abstractHoney is a valued product by the amount of compounds present in its composition that can benefit human life, the work brings as research the characterization of meads made from different honey samples of Africanized bees. Were performed analysis microbiological, physicochemical and pollen in honey, for then, allow to prepare and analyze properly the samples meads checking which its physical and chemical characteristics, its global acceptance and purchase intent of products. Honey samples and meads are within the established standards for legislation. Samples orange of and grape had lower alcohol levels and higher amounts of reduced dry extract , better global acceptance and purchase intent.
