dc.description.abstractThe use of precepts, techniques and quality management tools have been essential in order to guarantee quality and security to product/service, improving the competitivity and customer loyalty. Besides, the quality management framework can offer ways to reduce waste increase productivity. For that reason, the quality management concepts are widely applied in several industrial sectors. However, not all industrial sectors have the same level of maturity related to quality management. Thus, the project aim was, by means of a bibliographic survey, identify the use of techniques and quality management tools in food industry. Thereby, was possible to verify that in this sector procedures to ensure food safety are common. However, in comparison with other industrial sectors, there are many opportunities to increase products and processes quality under different food safety optics.
