dc.description.abstractWith the increase in various diseases caused by the action of free radicals, it is necessary to know the antioxidant properties of the population's diet, aiming at combating and/or mitigating the effects caused by these radicals. According to studies, honey, propolis and bee pollen from various species have a great antioxidant potential, however, those from the bee specie named Jataí are not widely used. The present work aims to evaluate the antioxidant activity of honey, propolis and pollen from Jataí bees through the ABTS free radical capture methods, DPPH, and also through the methods of total phenolic compounds and flavonoid content. The results obtained in the present work showed that pollen and propolis have a great antioxidant activity, whereas honey presented lower results, which was expected according to the literature. Thus, it is expected that the consumption and use of these products increase, due to the great benefits they offer to health.
