Quality control operates from the receipt of raw materials to delivery of the final product, with guaranteed quality to the consumer. From database of consumer care (SAC) service can collect data from the same satisfaction or dissatisfaction, complaints quantify daily, receive the description of non conformities found in the final product and the specific date of production. When you find a negative SAC, the use of PDCA to reverse this result in the next few months and ensure the overall quality of the technical process again becomes necessary. The technique PDCA (Plan, Do, Check, Action) is nothing more than "improved methods" , with a cycle of statistical control that can be repeated continuously over any case or issue. This applied correctly, respecting each step technique brings productivity gains to businesses, assist in reaching goals, SAC provides better results (fewer complaints). Considering what was mentioned above, the aim of this study was to demonstrate the effectiveness of PDCA technique to ensure the quality of a product and reduce complaints of altered characteristics. Using the methodology of PDCA cycle was efficient in this design to reduce the number of complaints a production line of desserts by 24% from 2012 to 2013, with the stated goal was 20 %.
