Supply centers are great generators of organic waste. These wastes usually do not have a proper allocation, causing them to be sent directly to controlled landfills and dumps, causing material waste and energy. Anaerobic digestion is an alternative for the treatment of this waste and provides energy and material recovery through the generation of methane and fertilizer. Thus, this study aimed to characterize and evaluate the variation of composition and physico-chemical characteristics of organic waste generated in the Central de Abastecimento S.A. (CEASA) in the Foz do Iguaçu Unit, digest these anaerobically waste and measuring the generation of biogas, and monitor the stability of the reactor. The composition of Fruits and Vegetables Waste (FVW) has been variable over the months. These have acid character, low alkalinity and high content of volatile solids (VS). In most months total solids content (TS) and carbon / nitrogen ratio (C / N) of the FVW had ideal values for anaerobic digestion. However, the pH and total alkalinity (TA) shown below is recommended for all readings. The reactor proved to be stable throughout the entire monitoring, maintaining values below 0.16 for the intermediate alkalinity relationship (IA): partial alkalinity (PA) and volatile acids (VA) / Total Alkalinity (TA). The average volumetric biogas production tended to rise with the increase in Volatile Organic content (VOC) applied, reaching a generation of 711 mLN L-1 reactor d-1 with a content of 66% methane.
