dc.description.abstractThe present study carried out, as its theme, a bibliographic analysis of Brazilian agroindustries in relation to the cutting of chickens, data related to Brazilian exports containing Brazilian legislation so that agribusinesses can commercialize their products and a brief analysis of the freezing process. After reviewing the theory on the need for technological developments in agroindustries and the difficulties in freezing products for conservation and achieving the required legislation, a case study was conducted with tests in a freezing tunnel of an agribusiness in the state of Santa Catarina. The objective was an improvement in the volume of supplies of products in cardboard boxes put together by staples to be frozen in a freezing tunnel of a cutting chicken agribusiness company and therefore analyzing the improvement regarding the time of product retention to meet the needed temperature. After the improvements were made, it was concluded that the quantity of products to be frozen had an increase of 119 boxes per hour, which represents an increase of 19.44%, optimizing the space inside the freezing tunnel and also improving the freezing of products within a longer retention time due to the improvement of products placed inside the tunnel for freezing.
