dc.description.abstractMilk is an important source of nutrients, being consumed by the majority of the world population. However, it can suffer with contaminations, being these chemical, physical and biological. One of the most worrying chemical contaminants is mycotoxins, with emphasis on aflatoxin B1 due to its toxicity. Aiming at health concerns, several studies have been carried out to promote partial or total decontamination of milk. Among them are methods involving the use of probiotics. The use of prebiotics for decontamination or reduction of bioaccessibility is still recent. The objective of this work was to evaluate the action of probiotics Lactobacillus casei and Lactobacillus rhamnosus and the prebiotics inulin and oligofructose in the reduction and bioaccessibility of AFB1 in artificially contaminated milk. When analyzing the results, it was observed that there was a reduction of AFB1 in all the treatments, being the best treatment to that added of the two probiotics, with a reduction of 88.47%. Among prebiotics, inulin, when added alone, was the one that presented the best result (84.69%). Regarding bioaccessibility, the use of the probiotic L. casei resulted in a bioaccessibility of 11.53%, while the addition of oligofructose 34.43%. with this, it can be noticed that the application of these microorganisms allied to prebiotics is effective in the reduction of AFB1 in milk, and can be applied in industries.
