dc.description.abstractThe present study aims to analyze the physical-chemical and microbiological conditions of UHT milk samples. In the months of August and September of 2018, samples of UHT (whole milk) were collected corresponding to three different brands, totaling nine samples, being the conditions evaluated through chemical physical methods, ºBrix, determination of acidity by titration, protein content by formaldehyde, ethanol stability, microbiological evaluation and bacterial counting. The analyzes were carried out in triplicate, in order to evaluate several aspects of quality in different UHT milk brands offered in the retail market. The results of the analyzes indicate that all species are within the standards, except for the content that one of the brands presented a lower value than the one established by the legislation.
