La decisión sobre el disolvente ideal siempre será un compromiso en función del proceso, la disponibilidad de recursos y las moléculas objetivo. Una alternativa viable es el uso de aceites vegetales, los cuales pertenecen a los disolventes de base biológica. Esta revisión muestra el potencial de los aceites vegetales como disolventes ecológicos alternativos en la extracción de compuestos naturales, en particular compuestos fenólicos, antioxidantes, pigmentos y otros metabolitos.Ideal alternative solvents should have high solubility, high flash points, low toxicity and should not cause environmental problems. The decision on the ideal solvent will always be a compromise depending on the process, resource availability and target molecules. A viable alternative is the use of vegetable oils, which belong to the bio-based solvents. This review shows the potential of vegetable oils as alternative bio-based solvents in the extraction of natural compounds, in particular phenolic compounds, antioxidants, pigments and other metabolites.es-ES
