The current study aims to establish the relationship between ergonomic risk and body structure, with labour fatigue in manual load transport of the food sector in Cuenca. 59 workers were surveyed from three food companies. Ergonomics was assessed using the method LEST with its physical load and mental load dimensions. Work fatigue was assessed with a questionnaire SOFI-SM, with its physical fatigue and mental fatigue dimensions. Results show that with a statistical significance of 5%, the ergonomic risk is directly correlated to labour fatigue in 28.6%, with a probability of error of 2.8%. It is suggested implementing actions to promote healthy work environments that include preventive culture of occupational health and safety. It is also suggested that operators are seated during working hours. These measures would reduce the level of exposure to ergonomic risk in terms physical load in 33.33%.
