dc.description.abstractThe biosafety protocol is understood as a set of standards and guidelines intended to provide security and protection measures as a guide for those who must carry out activities that may affect their health and, above all, the health of the client. The objective of this intervention work was to develop a manual of biosafety protocol for the catering service within the city of Basin. Case: “Nayla Events and Catering”. In the first instance, the lifting of a theoretical framework on the catering service, background, classification, components, and an analysis of the current situation of the service in the Cuenca city. Subsequently, a compilation of the main national and international regulatory guidelines related to biosecurity measures applied to the catering service, an analysis of the situation of the study company through scheduled visits to the entity and a deep interview. Finally, based on the information collected, proceeded to structure a biosafety protocol manual applied to "Nayla Events and Catering” that adapts to the needs of the case study. Keywords: Biosafety.
