dc.description.abstract | The present work was developed with the objective of making a diagnosis on the generation of residual vegetable oil (AVR) in restaurants and fast food establishments and their final disposal, in the city of Azogues, province of Cañar.
The information was obtained through a survey applied to 59 restaurants and 41 fast food stores, which are registered in the Urban Control Department of the Municipality of Azogues.
According to the results of the survey it is established that the total volume of AVR, which generates the population of restaurants and fast food outlets in the city of Azogues, is 714 liters per week; with a total of 2856 liters per month of residual vegetable oil generated by the 100 establishments studied. The analysis of the result showed that fast food establishments can be classified as the largest generators with 492 liters per week, while the population of restaurants as small generators with 222 liters per week.
Regarding the final disposal, it was determined that most of the restaurants have the final disposal of waste oils in the common trash, while the fast food stores deliver their residual oil to third parties or informal recyclers and it is unknown the disposition they give to waste.
It is established as the best option for an adequate management of waste oils in the city of Azogues, perform an adequate in-situ storage, collection and delivery to an authorized manager. | |
