dc.description.abstractThe purpose of this research is the Ethnographic study of the Gastronomic Culture of the San Bartolomé de Pinllo parish from Ambato canton, therefore, the gastronomic traditions and the cultural diversity of the parish was documented with its tourist attractions and places where you can taste the different typical dishes. The bibliographic, descriptive, exploratory, experimental, cross-sectional investigations were applied in the development of this work. The empirical method was used. For gathering information techniques such as the surveys, that were given to the people previously established as the target population, as well as interviews to owners of premises that sell typical dishes and different people of the parish who maintain the tradition regarding the way of preparing food were applied. The registration was made on the card established by the National Institute of Heritage and Culture where it is evident location data, reference photographs, identification data, description, valuations, annexes, control data. Additionally, a standard cookbook was designed in which the name of the dish is recorded with the corresponding preparation, type of menu, ingredients and assembly of each of the typical dishes of the place. In order to conclude this research work, the gastronomic study of the San Bartolomé de Pinllo parish was documented in a multimedia resource, which includes the tourist attractions, the recipes of the traditional dishes and a list of places where you can go to taste the gastronomy. In this way, it is intended to socialize the culinary traditions that for many years have been well known by locals and foreigners.
