dc.description.abstractIn the present investigation, the quality control of a raw milk collection center CA1., was carried out located in Riobamba canton, Chimborazo province, with the participation of 27 milk producers that generate between 1,800 to 2,000 liters daily. It was found that most of the producers did not have a routine milking protocol according to the monitoring carried out. Laboratory analyses were carried out on the raw milk using Lactoscan equipment to determine physical-chemical parameters and the surface and deep plate rendezvous technique were applied for microbiological determination, resulting in a high content of the following microorganisms: aerobic mesophilic bacteria (7,34 to 8,38 log UFC/mL), Staphylococcus spp. (5,82 to 7,79 log UFC/mL), whole bacteria (6,19 to 7,75 log UFC/mL), moulds and yeasts (6,18 to 7,15 log UFC/mL), being these harmful to the health to the consumer, unlike lactic bacteria which are beneficial in the dairy industry and human metabolism. In conclusion, it was verified that there are bad hygienic-sanitary conditions in raw milk; for this reason, it is recommended that the personnel and producers of the collection center be trained in the good hygienic practices mentioned in the Manual of Procedures for the Surveillance and Control of the Safety of raw milk – Resolution DAJ-2013461-0201.0213, from milking to reception at the milk storage plant, guaranteeing the suitability and safety of the product.
