dc.description.abstractThis research is to develop a manual of procedures to ensure the quality of Good Manufacturing Practices in the area of nutrition and feeding of patients in the Cantonal Hospital of Guamote. The present work is a descriptive, cross-sectional for the preparation of a proposal to ensure the quality of Good Manufacturing Practices in the kitchen area of Guamote Hospital. To carry out this research using an observation sheet as a research tool it was applied to the kitchen area to set the current situation in which it is located, where the strengths and weaknesses shown are required the same, so it was determined by observation sheet that the property is not in good condition in full and that in terms of facilities, cleanliness and sanitation, pest control, personal hygiene, security management teams are applies a certain number of rules, but it comes to staff training and storage conditions regulations established in accordance with Good Manufacturing Practices because no trained staff and no proper storage of raw materials do not apply . We conclude that the handling staff lack training and improve the quality of facilities. It is recommended to take greater care in health centers and keep doing this kind of research because it is a danger to humanity operate under these conditions.
