dc.description.abstract | The objective of this work was to design and build a semi-automatic dosing machine for gastronomic use with a capacity of 25,000 cm3 to make sighs from French or Swiss type dough in small and large sizes. The first step, a quality function analysis (QFD) was carried out, for later the selection of the best alternative composed of a system drive through a gearmotor, a dosing system using external gears, a conveyor belt advance system by means of a motor coupled to a chain and a platform lifting system through an electric motor with a toothed wheel coupled to a power screw. With the help of SolidWorks software, all the elements and components that make up the machine were modeled and sized, thus verifying their strength and safety factor through the ANSYS finite element method. The construction of the machine was developed based on two systems, the mechanical system consisting of a frame whose material is ASTM A36 structural steel, a 304 stainless steel hopper and platform, external gears made of food grade grilon (polyamide 6), a 1020 steel power screw and an electrical system where its components were selected based on the control and power diagrams of the machine. The results obtained are satisfactory, obtaining 1938 small meringues in 85 minutes and 652 large meringues in 28 minutes at their maximum capacity of 25 liters, taking into account a product loss of 14.92% (0.746 liters) in small meringues and 23.28 % (1,164 liters) in large meringues. It is concluded that the manufactured machine doses sighs in a short time, guaranteeing homogeneity and complying with the characteristics and quality of a standardized product. It is recommended to modify the design of the lifting system to obtain less time in the process of making the sigh, preserving its quality and characteristics. | |
