dc.description.abstractThe current research proposes the implementation of a culinary traditions register of Penipe County as a cultural intangible heritage as well as the documentation of culinary traditions since they have a great natural and cultural wealth, one of the most important traditions is Corpus Christi, its principal purpose is to proclaim and increase the catholic faith , legends, festivities, tourist attractions, typical and traditional gastronomy which make up the cultural heritage of the county. A survey was applied to 120 people from the county aged from 60 to 75 years who provided truthful information about typical dishes, drinks, utensils, seasonings used, and major tourist attractions. In addition an interview applied to 8 people (Owners of the most typical food restaurants , older people, and street sellers with longer working time) , since the experience allow them knowing about the preparation of the most traditional dishes of the area. Through the right compilation of information, it was possible to get a clear idea of the existing inference between typical and traditional gastronomy ; by means of the culinary traditions register it was possible to know the benefits to retake the customs , techniques and methods to maintain our cultural identity.
