dc.description.abstractIn this ethnography a study of the gastronomy of Canton Santiago de Píllaro was realized as a tourist and cultural element which has a great amount of cultural richness that is represented in its history and celebrations, one of them is the Diablada Pillareña that is realized from the 1st to the 6th of January of every year. For the investigation the qualitative method was applied by means of the use of use of surveys and the application of interviews to the key inhabitants of the canton to establish what are the typical dishes of the area and the importance of the traditional gastronomy in its preparations and ist symbolism to be offered to their own and strangers, reaching to consilidate trough this study the most representative dishes such as yahuarlocro, caucara, fritada, morcilla, shampoo, trout and the matchless mud duck. With this work, it was posible to créate a blog with important information about the benefits of retaking customs, traditions, methods, techniques, ingredients an utensils for the elaboration of the dishes investigated an thus maintaining the cultural identity of the sector. Gastronomic tourism is promoted as a new from of economic development. It can be concluded that it was posible to enhance the typical dishes of the canton and it was recommended that there is a good handling of the products in the process of food preparation as well as the continuous improvement of the premises where they are sold.
