dc.description.abstractThe current work of ethnographic type had like objective to give to know the gastronomy of Piñas canton, as well the customs and traditions in the elaboration and the preparation of the different dishes that characterize it, with the purpose of increasing the tourism of this. For the realization of the project, the type of non-experimental research was mainly used, observing the phenomena as the event and not interceded in the development, but the events were observed and analyzed consecutively. Two types of instruments were used for the collection of information, which were surveys and interviews, which were applied to 86 inhabitants and owners of restaurants in the town, which results were decisive for the knowledge of the typical preparations that the variety of the gastronomy the locality and that are very palatable by tourists. With the purpose of the investigation, a guide was made that showed a certain approach of the traditional dishes, and also a specific specification of each of the dishes. The benefit of this project creates improvements in the commercial field of the area, it is also important since there are people who do not know the variety of typical dishes that exist in this area.
