dc.description.abstractThe present study was carried out in order to elaborate a Manual of Good Manufacturing Practices (GMP) for the Plant Aniprotein Proteína Animal Cía. Ltda., the same one that makes and markets proteins and fats of animal origin (organ meal, feather meal, and fats and oils of chicken entrails), for the manufacture of balanced food for animal consumption. Which was done with the preliminary diagnosis with the checklist based on resolution 0066 issued by the Ecuadorian Agency for the Quality Assurance of the Agro (AGROCALIDAD). Which it was determined that the Plant has a 68% compliance, which frames: facilities, equipment, utensils, personnel, raw materials, and supplies, production operations, control of quality, and GMP documentation system. The shortcomings found within the Plant allowed the elaboration of a corrective action plan for the lifting of GMP requirements programs and procedures, based on the application of the Sanitation Standard Operating Procedures (SSOP), and the Standard Operating Procedures (SOP) to elaborate the Manual. It is worth mentioning that due to the policies of the company that did not allow to make the manual public. Once the improvements were applied from the studied, areas were evaluated again with the checklist obtaining a better grade of general compliance 97% of the company thanks to the use of the procedures described in the Manual and the training given to the personnel working in the processing plant.
