dc.description.abstractDataset accounted the information of 19 features (2676 samples) reduced in 3 PCA's. Among the 19 initial features, seven morphological and colour features (area, enclosing rectangular area, height, width, radius, brightness and saturation retentions) extracted from 1150 images of individual strawberry samples during drying processing, 490 for fresh (FR) and 660 for osmotically-dried (OD) samples were analyzed. Additionally, dataset contains information about samples and drying kinetics. Information about sample type (FR and OD, coated and non-coated) and time categories during MW drying was also included.
