dc.description.abstractVegan food has grown considerably, even so, vegans go through difficulties when eating, whether at leisure or on their travels. Therefore, this study had as its general objective the evaluation of the adaptation of the Food & Beverage sector of hotels in the tourist area of Ponta Negra in the city of Natal / RN to the segment of visitors with vegan orientations. Having as specific objectives: a) to identify if veganism is a market differential to the managers of the hotels surveyed; b) check if they have a menu with vegan foods to serve this segment; c) verify the adaptation of the menu to the public with dietary restrictions, seeking to integrate it with regional cuisine. The exploratory-descriptive qualitative research sought to cover a representative sample of hotels in the main tourist area of Natal, with the application of a structured questionnaire to managers in the Food & Beverage sector. It is concluded that the hotels investigated are partially adapted to this growing market segment.
