Resumen
Solid waste management is one of the pillars of environmental sustainability. Among micro and small companies, bakeries are one of the largest food distribution channels in the country, generating a high amount of solid waste, thus, the objective of this study is to carry out the qualitative characterization of the solid wastes generated and a Program of Environmental Education (PEE) in bakeries located in the metropolitan region of the city of Natal-RN, so that the enterprises have the condition to implement the selective collection. The methodology adopted was qualitative and descriptive, as for the technical procedures were case study, participant research and survey. Technical visits, questionnaire application, PEE and qualitative characterization of solid wastes were performed through gravimetric analysis. The results indicate that there are shortcomings in the production process and in the management of solid waste from bakeries, resulting in a lot of waste of raw material and high generation of solid waste. It was concluded that the characterization of the residues and the PEE was specified the type and quantity of the solid waste generated and the construction of new educational values was made possible, allowing the enterprises to install the selective collection and to carry out the appropriate solid waste management, aiming at minimize negative impacts on the environment and public health.
