Introduction: The Standard Operating Procedure (SOP) is intended to optimize a procedure, to it will be realized always performed properly, reducing errors and ensuring uniformity in the operating routine and patient safety. Objective: to develop Standard Operating Procedures (SOPs) for anthropometric and body composition assessment of patients with Amyotrophic Lateral Sclerosis (ALS) assisted at the ALS Outpatiet Clinic of Hospital Universitário Onofre Lopes (HUOL). Method: the period of elaboration of the SOPs took place between the months of June and August 2020. To support the study, a search was carried out in the databases of Pubmed and Google Scholar in articles published between 2005 and 2020, and a survey of articles about the population with ALS and about the health population was carried out. The construction of these SOPs was based on the measurement method recommended by the literature described in the study, as well as being adapted to the reality of patients with ALS, when necessary. Results: 10 SOPs were elaborated, 9 for anthropometric assessment and 1 for body composition through bioimpedance. Conclusion: SOPs will be useful to guide the proper performance of anthropometric and body composition assessment in ALS patients assisted at the ELA/HUOL Outpatient Clinic, enabling safer and more reliable care.
