Resumen
The Aqueous two-phase system (ATPS) ethanol/ammonium sulfate ((NH4)2SO4) was employed with the purpose of extracting and, preliminarily, purifying anthocyanins from Vaccinium uliginosum, known commonly as Blueberry. Many factors that influence the formation of the ATPS were investigated, such as the salt and alcohol concentration, the quantity of blueberry extract used, and the system pH, in order to improve the performance of extraction. For the system, it was determined as optimal conditions of 30% (w/w) of ethanol, 20%(w/w) of (NH4)2SO4, with the addition of 10% of extract, under pH 5.0. These conditions allowed to obtain anthocyanins recovery rates and partition coefficient of 95,5% and 15,6, respectively; although, it had obtained a poor performance in the removing of reducing sugars. Nevertheless, the use of Aqueous two-phase system (ATPS) for the recovery of biomolecules is a suitable technology, being possible its utilization to extract anthocyanins from blueberry.
