Resumen
The concern with the quality of the food became necessary to realize that the numerous problems of health were not only due to the fall of production, after the second great war, were also of the sanitary conditions in the process. Although this concern had already manifested itself in a more timid way, such as the inspection of navigations in the European ports in the middle ages, it was only in the early twentieth century that the idea of food safety emerged from the creation of regulatory and surveillance bodies of the products and services. The regulations require that safety measures and their monitoring be documented, setting objectives and responsibilities. This work deals with the creation of an application in Android system, which initially serves as a prototype for the purpose of storing the data referring to such documents, and that assists in its control. The intention is that professionals can focus their attention on the process, making the dedication to the bureaucracy of documents more flexible. Making them their ally as source of information for diagnosis of processes and decision making.
