School nutrition is responsible for ensuring the amount and quality of food provided and the school menu also influences health eating habits therefore a healthier lifestyle. There are many factors which interfere in the microbiological quality of food offered at schools, many of them can lead to food borne illness. Such illness can occur due to a mistaken choice of products, in the conservation and preparation process or due to lack of hygiene, for instance cookware that are not sanitized,contaminated water, inappropriate local hygiene etc. Food handlers are direct or indirectly responsible for up to 20% of food borne illness cases. This thesis aims to verify and study sanitary conditions in the preparation ofschool meals by the means of literature analysis . The data presented in this paper make it possible to perceive that school's food and nutrition personal are not well trained. Nowadays, there are not many papers and studies on this subject, thus it makes this research more difficult.
