dc.description.abstractPhysical-chemical and microbiological qualities of 1920 commercial eggs submitted to packaging and mineral oil coating were evaluated during storage under refrigeration up to 125 days. Decrease of inner quality of the eggs was observed during the experiment. In contrast to application of mineral oil, the use of packaging had no influence (p<0.05) on the internal quality of the eggs. The application of oil and use of packaging had no effects on microbiological results. Microbiological analyses showed absence of Salmonella spp., Staphylococcus aureus, thermal-tolerant coliforms, and fungi. However, high counts of mesophilic aerobic and psychrotrophic were recorded. The bioactive amines detected and quantified were putrescine, cadaverine, spermidine and spermine in egg yolk and putrescine, cadaverine and phenylethylamine in albumen. It was not possible to establish index of quality of egg using bioactive amines present in the yolk and albumen of eggs.
