he training in nutrition is a pedagogical strategy to change eating behaviors, improving nutritional assistance especially at risk populations. In institutionalized elderly, caregivers are professionals responsible for providing food, which puts them in position key to the success of nutritional management. To train these professionals can promote improvements in nutritional status and reduction of complicationsrelated to malnutrition. Objectives: To train caregivers of a long-stay institution for the elderly to provide a safe and effective nutritional care. Methodology: literature review consisted of theoretical and practical foundation for the activities and development of the intervention proposal involving the steps: realization and presentation of the situational diagnosis of ILPI; definition of the target audience; planning activities based on issues and milestones; propose a schedule of fifteenweekly meetings, lasting approximately 25 minutes, scheduled from August to December 2015 with themes identified through the diagnosis and its teaching strategy; proposal evaluation. Final Thoughts: The difficulties about power pervade by social, cultural, physiological and economic aspects and it is known that the group of institutionalized elderly is more susceptible to nutritional risk and grievances. Thenutritionist is the professional responsible and able to monitor and manage communities supply. Nutrition education promotes improvement of nutritional status, it being directed both to dinner as the person responsible for the food supply
