Currently, consumer trends have been changing due to the great interest that people have begun to develop towards healthy eating habits and the use of environmentally friendly production techniques. Thus, natural products have been gaining great importance, representing a business opportunity for people who are dedicated to their production.One of the great strengths that our country Colombia has, and especially the Department of Boyacá, is represented in the agriculture, producing inputs of excellent quality for human consumption, most of which cannot be fully exported due to high costs and the large number of requirements demanded by the entities in charge of controlling their commercialization, losing a large part of the crops and thus generating losses for farmers in the region.
Taking into consideration this productive potential, the idea arises of taking advantage of the wealth of exotic fruits that are grown in the province to make artisan ice creams using Liquid Nitrogen as a freezer, which is why this business plan arises, which was developed following guidelines such as: analysis of the environment to know what factors directly influence the development of the enterprise; Market research to determine the market niche you want to reach and how receptive they are to the idea of consuming food prepared in a novel way; technical and operational study to establish what is required for the start-up and optimal operation of the project and organizational and financial aspects in order to determine the profitability and viability of a new business.
