In this project, an analysis of the process of market assembly in the area of Selection and Classification of Groceries has been carried out at the Food Bank of Bogotá; where an initial diagnosis was made, to identify and define the problems that arise in the execution of this and establish proposals for improvement.
Throughout the process analysis, a series of inconsistencies could be evidenced, which enabled the formulation of the research problem, through the use of the SIPOC tool; identifying critical control points (CCP); In order to know which activities required strict supervision for improvement, it was also possible to demonstrate the root causes of the problems seen in the assembly of the markets. In accordance with the above, to propose a technological tool, to have a greater control and monitoring of the process, and with the opportunities for improvement to achieve its execution in a more efficient way, for this, a standard procedure was proposed to perform the process by registering it in the document used by the Food Bank.
As a last stage of the investigation, indicators of logistic management were proposed, for the control of the performance and behavior of the process in: the differences of inventory with the products used to arm the markets, the inaccuracy of the same at the end of the process; thus achieving greater efficiency, effectiveness, efficiency and productivity of this, so that the end user (Foundations registered with the Food Bank) feel satisfied and achieve their social objectives.
