It is increasingly common to find on the shelves products that do not form part of the regular diet or the basic basket of food consumers, with special characteristics of both in presentation and taste, have generated an increasing demand of gourmet products, which include vegetables, object of this project, in order to establish the feasibility studies for the creation of a micro-enterprise for the production and marketing of leafy vegetables (curly lettuce green, Lisa Green, purple crepe, Roman and Tudela buds) and fruit (Cherry tomatoes) taking into account the trends of the market today, with a differential factor, get these products under the standards of technology cleans, helping in this way to improve the balance with the environment, ensure safe food and with a high quality, which implies a special handling of all the factors that affect the development of the productive chain.
The town of Paipa is known for its tourist vocation, the proximity to the capital of the Department of Boyacá (Tunja) and intermediate cities such as Sogamoso and Duitama; It has restaurants and hotels that serve people of different socio-economic strata, but in a significant part of these establishments, are groups belonging to levels 4, 5 and 6, who have the purchasing power to enjoy the offered products. Information about shopping habits and the use of different vegetables in the respective preparations could get through a survey carried out on this type of establishment. This allows to determine the target market and potential amounts to bid in the town.
With this information, establish the needs of plant, equipment, labor, tools, supplies and others that affect the planning of production and in the establishment of the greenhouse, raising costs and expenses representing the mounting bosses, including the commodity reference price in the current market, in order to obtain information from the projection of sales and determine if the project is viable financially and they are generated enough income to support microenterprise in the proposed horizon.Based on this information, outlining various scenarios in which alternatives are proposed in order to assess the feasibility of the project, taking into account the price, the increase in production and the possibility of engaging in other towns, increasing in this way the offer, since the trend of the consumption of such products is increasing and the area in which the town of Paipa is located is characterized by developing projects that promotes habits and healthy lifestyles, where undoubtedly the food is part of these premises; In addition to this, also is imposed sustainability in different forms of production, so the project, with clean technology, maintains the balance and generates reliability in the production and food safety, which can be verified in the traceability of the same.
