dc.description.abstractCurrently, the regulatory bodies of Good Manufacturing Practices (GMP), have increased the requirements to ensure the quality of products and as a priority are focusing largely on hand cleaning and disinfection programs, and in production areas plants, due to the risks associated with cross-contamination that may occur between different food products. In the present study, two natural products based on citrus extracts were evaluated as an alternative to the replacement of Triclosán used in antibacterial hand soaps. For this, two (2) Kelsey Maurer and Kirby-Bauer techniques were performed. In the first set 90 seconds as the optimal time of effectiveness of extract 2 to 0.5%, from the logarithmic reduction found of the values obtained; and in the second, sensitivity was observed in the triclosán, and resistance in the extracts according to the size of the inhibition, for the microorganisms B.cereus, E.coli and S. aureus, and when using the protocol of hand washing recommended by The World Health Organization Organization (WHO), for the quantification of the fungal and bacterial flora in the hands, it was found that the use of Extract 2 as active, in antibacterial soap, significantly reduced the logarithmic units of bacteria and fungi in comparison with the triclosán.
dc.description.abstractActualmente, los organismos reguladores de las Buenas Prácticas de Manufactura (BPM), han aumentado las exigencias para asegurar la calidad de los productos y como prioridad se están enfocando en gran medida, en programas de limpieza y desinfección de manos, y en áreas de las plantas de producción, debido a los riesgos asociados con la contaminación cruzada que puede darse entre diferentes productos alimenticios. En el presente estudio se evaluó dos productos naturales a base de extractos de cítricos como alternativa de reemplazo del triclosán empleados en jabones antibacteriales de manos. Para ello se realizaron dos (2) técnicas Kelsey Maurer y Kirby-Bauer. En la primera estableció 90 segundos como el tiempo óptimo de efectividad del extracto 2 al 0.5%, a partir de la reducción logarítmica hallada de los valores obtenidos; y en la segunda se observó sensibilidad en el triclosán, y resistencia en los extractos según el tamaño de inhibición, para los microorganismos B.cereus, E.coli y S.aureus, y al emplear el protocolo del lavado de manos recomendada por la Organización mundial de la salud (OMS), para la cuantificación de la flora fúngica y bacteriana en las manos, se halló que el uso del Extracto 2 como activo, en el jabón antibacterial, redujo significativamente unidades logarítmicas de bacterias y hongos frente al triclosán.
