Resumen
The production of balanced feed faces due to inadequate management and control, the negative effects on the economy of the industry (increased cost of inspection, continuous analysis, claims and control measures), to farmers (low in animal productivity, disease and death). By the direct links between food safety of animals and the safety of food for human consumption of animal origin, it is essential that the manufacture of balance food is considered as an integral part of the food production chain. The present work consisted in structuring and implementing a plan of Good Manufacturing Practices, based on policy guidelines for the control of GMP in food manufacturing plants of zootechnical use required by Agrocalidad, these GMP were developed in a company manufacturer of food for poultry located in the canton Pallatanga. for its design, information was carried out to determine the base line of the productive unit, information was collected through the check list on GMP and regular visits, together employment, (Ishikawa diagram) qualitative analysis techniques and quantitative (pareto diagram) it was possible to identify the cause of non – compliance with GMP. In addition, microbiological quality was evaluated before and after the implementation of GMP. Achieving reducing Eschericha coli and coliformes 1733,00 UFC/gr, salmonella negative, molds and yeasts 1383,00 UFC/gr and aflatoxin B1 1, 53 ppm. The nutrirional quality did not present significant differences. All these values below the maximum limit required by the NET INEN 1829 standard. The desing and implementation of the improvement plan allowed to comply meet 70,30 % of the requirement to manage the certification of good manufacturing practices compared to 30,20 % at the beginning of the investigation, it is recommended to continue the implementation of GMP, as a requirement for an integrated quality.
