Resumen
The market characterization of inorganic egg (Lohmann brown hen) versus organic egg (country hen) has been carried out in ten cantons of Chimborazo province. It was a laboratory investigation, that is why the experimental units were consisted on the results of the surveys which are carried out in the productive establishments. A descriptive statistic was also applied. The surveys determined that the inhabitants comprise middle class. These people live in urban sectors, sell inorganic eggs and eat organic ones. The physical characteristics determined that inorganic egg has the best weight (64.38 gr) length (55.50 mm), width (42.03 mm), thickness of shell (0.14 mm), weight of shell (7.3 gr), while the organic egg has the best yolk color (10.79 points). In the organic and inorganic eggs production evaluation, we can evidence that an amount of money is gotten by intermediaries regarding to the price the producer offers and the price the consumer buys. The supply chain of egg production starts in the producer through intermediaries such as: driver, egg shops, shopkeepers and supermarkets. This chain increases the price of the egg and the consumer gets it at a higher price.
