dc.description.abstractIn the Food Processing Laboratory of the FCP, THE ESPOCH, Design, Development and Implementation of a Manual of Hygiene and Industrial Safety was conducted. Being the application of two stages of evaluation (before and after), the experimental results were subjected to a hypothesis test for binomial variables. The results indicated that the physical risks experienced significant changes in lighting and electrical system while the noise was not possible to change; all I did was reduce it using mechanisms to avoid decreased sound intensity, Chemical hazards could be avoided through the application of industrial safety and occupational health, in areas such as floors, walls, equipment and utensils. The application of a manual of industrial safety and occupational health allowed me to control the problems of biological type and reduce the microbial load of different devices within the laboratory, such as the blender, the pulping and the refrigerators. The design and implementation of MHSI, was prepared in compliance with National regulations on Industrial Safety and Occupational Health Therefore it is recommended to observe and implement the Manual of Industrial Safety and Occupational Health which will serve to prevent physical, chemical, biological and ergonomic hazards.
