dc.description.abstract"At the Laboratory of matural Products of the Science Faculty of the Escuela Superior Politécnica de Chimborazo, the anti-oxidizing activity of four vegetal species fractured with tree solvents of increasing polarity (chloroform, cthanol and water) at three concentration levels for cach, was determined; they were prepared from the cthanol extract of the acrial portion of Eugenia hall, Polypodium calaguala, Sonchus oleraceus and Mynthostachis mollis, collected in the Chañag community, Quimiag parish, Riobamba canton, Chimborazo province, using as an experimental methodology the trial of anti-oxidizing capacity according to the enzyme method of inhibition of the polyphenoloxidasc and as an anti-oxidizing pattem the ascorbic acid at 1000 pg/mL dosage. Thus from the fractions extracted from the vegetal material the study object it was determined that they have between them differences as to their anti-oxidizing activity, according to the results expressed in the tables N? 05 up to N? 28; it was Tound out that the 1000 g/mL dosage of the chloroform fraction of £ halli, P calaguala and S oleraceus were which presented the highest percentage of inhibition to oxidation with 100 % average. It was determined that the chloroform fraction of these vegetal species has an amti- oxidizing activity and the effective extract concentration which manifests the best effect, is evident. Moreover, the results exposed in the table N? 35 in which the elevated concentration of Mavonoids is verificd, explain up to a certain extent the anti-oxidizing capacity of £ hallí and P. calaguala. As to the chemical nature of the favonoids responsible for the anti-oxidizing activity, from the results it is possible to put forward the hypothesis that those due to their solubility are derived metoxilated flavonics, a fact that explains that the chloroform extracts present a major enzyme inhibition."
