dc.description.abstractIn this research project, the evaluation of the concentration of As in three foods, potatoes (Solanum tuberosum), corn (Zea mays) and raw milk produced in the areas affected by the Tungurahua Volcano (Guano and Penipe), was carried out using the method scientific, inductive - deductive with the interest of investigating the innocuousness of said foods that are consumed, carrying out the analysis by the Atomic Absorption Spectrophotometry Method with generation of hydrides, in the Faculty of Sciences, in the Center of Technical Services and Transfer Environmental Technology (CESTTA). Obtaining the sample was carried out with great care so that the properties of the product were not affected. The food was processed in its entirety with 1 kg of cultured sample and 5 ml of milk, then it was taken to wet digestion using the Simplicity digester. in order to obtain the sample for the reading of the equipment used. Being their concentrations;, in corn from the Guano sector, 0.03080 mg /Kg and from the Penipe sector 0.02713 mg /Kg, in milk from the Guano sector 0.03575 mg /l and from the Penipe sector 0.04467 mg /l. which were found within the limits established by the Ecuadorian INEN standard of 0.1 mg/Kg.
