Preparação e estabilidade do extrato antociânico das folhas da Acalipha hispida

The anthocyanins from the leaves of Acalipha hispida were extracted with MeOH/citric acid. The extracts free of chlorophylls were concentrated by reverse osmosis (30°C) and finally under vacuum at 35-37°C. The stability of the concentrated extract in citrate/phosphate buffer was determined in the dark and under light of 2.500 lumen by measuring the loss of absorbance at 530 nm. From these values it was possible to calculate K and t½ for each system. The main anthocyanin was tentatively identified as cyanidin-3-arabinosyl-glucoside. Folhas da Acalipha hispida, foram extraídas com MeOH/ácido cítrico a baixa temperatura e ao abrigo da luz. Os extratos livres de clorofila e outros produtos solúveis em éter etílico foram concentrados por osmose reversa (30°C) e finalmente sob vácuo a 35-37°C. Soluções do produto concentrado em tampão citrato/fosfato foram mantidas sob N2 ao abrigo da luz e sob efeito de luz de 2.500 lumens por tempos variáveis acima de 600 h. Pela medida da variação da absorbância dos sistemas a 530 nm foi possível calcular os valores de K e t½ de cada sistema.
